Honey, I thought, was that generic amber-coloured liquid that one used on one’s toast. Along the way one picked up some details: honey was found in the pyramids of the pharoahs and it had not gone bad after hundreds of years; the honey from the Sunderbans was called the widow’s tears because so many honey-gatherers died in trying to collect it.
And then one day, I wandered up to the UTMT stall at the Kala Ghoda fair. I was educated about honey and I became a convert. I also found a way to enjoy honey without being exploitative of the poor.
If you don’t believe that honey can have flavours or textures, try this test. Line up two or three of the bottles of UTMT honey. Then dip a dry finger–go on, it works–into a bottle and lick. Use another finger and another bottle. Each honey will explode on your palate differently. In each, there will be the basic sweetness, the basic health, the basic joy of honey. But in each one, you will notice a difference.
